I have a secret go-to cheat food when I'm feeling like I want to stuff my face, its Miracle Noodles!
Made of glucomannan they are completely calorie free and come in 3 varieties- rice, angel hair and fettuccini.
What is glucomannan? It’s a beneficial, soluble and fermentable dietary fiber derived from the root of the konjac plant.
The benefits include blood sugar stabilization, weight loss, prebiotic action for intestinal floral and increased bowel movement regularity.
I'll warn you, the first time you use miracle noodles you will be grossed out. They come packed in water and they smell pretty badly.
You have to rinse them, then cook them for 2 minutes in boiling water, then strain. If you want a "dry" noodle or rice you need to heat them in a skillet, but I almost always use them in sauce or soup so I skip the last step.
After you rinse them, they smell and taste normally plain.
If you need or want to restrict your carbs and sugar intake to regulate your insulin, miracle noodles can help you.
I make the angel hair noodles in bone broth with cilantro and basil and some Siracha and it reminds me of eating ramen noodles. I also love to do the same thing with the rice, add a squeeze of lime for even more flavor!
They are especially great to eat before or after you know that you will be having sugar, because they will help stabilize your insulin response and minimize your weight gain, plus they are very filling.
You can make traditional recipes for your family and replace the noodles or rice (or any starch) in your meal with miracle noodles and no one will know!
To your health & happiness!
